Chocolate Chip Peanut Butter Cookies

½ c. crunchy peanut butter 1 tsp. vanilla
¾ c. vegetable shortening 1 ¼ c. all-purpose flour
½ c. firmly packed brown sugar ½ tsp. baking soda
½ c. granulated sugar ¼ tsp. salt
1 egg 1 (6-oz.) pkg. chocolate morsels
Preheat oven to 375. Measure peanut butter, shortening, and brown sugar and place in mixing bowl. Add granulated sugar, egg, and vanilla. Beat until thoroughly combined. In a separate bowl, stir together flour, baking soda, and salt. Add to peanut butter mixture, mixing well. Stir in chocolate morsels. Using spoons or a scoop, drop batter two inches apart onto cookie sheet. Bake for 10 to 15 minutes. Remove cookies to a cooling rack. Makes 4 dozen cookies.
